Simply Roasted Asparagus

 

Want to learn a new way to cook vegetables that’s really simple?  Tim and I both love a variety of veggies, but we get tired of always steaming them.  Oven roasting is a really easy way to prepare them, and it creates a whole new flavor! You can use this same method with broccoli, cauliflower, fresh green beans, etc., but here it is with asparagus.

Garlic Roasted Asparagus

Ingredients:

  • 1 bunch asparagus
  • About 2 T Extra virgin olive oil
  • 2 cloves of garlic, minced
  • Grill seasoning (such as Montreal Steak Seasoning)
Directions:

Preheat oven to 400 degrees, or if it runs low like mine, 425.

Wash asparagus and trim off tough ends.  Spread out in single layer on a baking sheet – yep, you guessed it – lined with aluminum foil.  Drizzle lightly with olive oil.  Sprinkle on the minced garlic, and liberally sprinkle with grill seasoning.  Toss around with tongs or your fingers to coat all of the spears with oil and spread around the seasonings.

Bake 10-14 minutes, or until done to your desired tenderness.  If you’re really feeling froggy, sprinkle on some sliced almonds and/or Parmesan cheese!

  1. I love roasted veggies especially parsnips! I recently tried feta on roasted asparagus and it’s yummy! I think I like it even better then parm.
