Whole Wheat Pancake Mix

A few days ago, we were having some family over, and I wanted to make a breakfast casserole. I was looking around for a new recipe, and I found one that called for adding pancake mix in with the eggs. I thought it was an interesting spin, so I decided to give it a try. (Incidentally, the casserole was delicious, but this time around I did not take pictures in order to blog it. Maybe next time.) The recipe called for boxed pancake/biscuit mix, which I did not have and did not particularly care to buy to have it sit in my pantry, mostly unused. I have been making my pancakes from scratch for a while now because it’s so easy and I can control what goes into them. So I started looking around for a recipe for dry whole wheat pancake mix that I could mix up, use in this recipe, and keep the rest in the pantry.

I found this recipe, and it got rave reviews, so I decided to give it a try. It worked great in my casserole, and I’ve since tried it out for actual pancakes. It was delicious, and very easy! The pancakes turned out fluffy and flavorful. Easy to mix up initially, and easy to use when I was ready to make pancakes. I keep it in a zip top baggie, but you could keep it in a canister or any air tight container. You can add anything in the pancakes you want – blueberries, bananas, chocolate chips, nuts, cinnamon, etc. I like that this uses whole wheat flour, and I used part raw sugar.

When you are ready to make pancakes, you use a cup of the dry mix and add one egg, two tablespoons of oil or butter, a teaspoon of vanilla, and a cup of buttermilk or any soured milk you like. To sour milk, you just put a tablespoon of white vinegar in a measuring cup and fill it up to a cup. You can do this with regular dairy milk, soy, almond, coconut, cashew, etc.

The fact that the dry mix is already made up makes these pancakes come together in a flash. Perfect for a quick weekend brunch, a weekday breakfast, or an easy breakfast for dinner.

Adapted from Allrecipes

  • 5 cups whole wheat flour
  • 3 cups unbleached all-purpose flour
  • 1/2 cup sugar (I used half raw, half white)
  • 2 1/2 Tablespoons of baking powder
  • 4 teaspoons of baking soda
  • 4 teaspoons of salt

Add all ingredients to a large bowl and whisk to combine well. Store in an airtight container.

To make pancakes, mix one cup of dry mix with 1 cup of buttermilk or milk, 1 egg, 2 tablespoons of oil or butter, and a teaspoon of vanilla.

Makes 10-12 3 inch pancakes.
