Peanut Butter Pretzel M & M Cookies

Hi, my name is Cara, and I am addicted to peanut butter.  I’m not ashamed of it.  I own it.  If you leave it to me, all baked goods will have peanut butter in them.  And chocolate.  And sometimes banana.

So anyway, cookies.  These are a really delicious balance of sweet and salty, with the peanut butter, chocolate, and pretzel M & Ms.  Have you had these yet?  They’re pretty good.  The only problem I found when making these cookies is that the M & Ms were so big, only 3-4 fit into a cookie.  So I did what any peanut butter chocolate loving baker would do and added some chocolate chips.  The cookies are nice and soft, as I feel all cookies should be.  A crispy cookie is not worth the calories to me, but I digress.

Have I mentioned there’s peanut butter and chocolate?  Ok, just making sure.

I made this dough a day ahead of time and refrigerated it, and it worked really well for me.  It doesn’t make a very big batch – maybe three dozen cookies – so you might want to double it if you’re feeding them to a peanut butter chocolate loving crowd.

Peanut Butter Pretzel M & M Cookies

Ingredients:

  • 1/2 cup vegetable shortening
  • 1/2 cup sugar
  • 1/2 cup brown sugar
  • 1/2 cup peanut butter
  • 1 egg
  • 1 tsp vanilla
  • 2 Tbsp milk
  • 1/2 tsp salt
  • 1 tsp baking soda
  • 1 3/4 cup flour
  • 1/2 large bag of pretzel M&M’s
  • 1/2 cup semi sweet chocolate chips

Directions:

Preheat oven to 350 degrees.

Cream together shortening, sugars, and peanut butter.  Add egg and mix well, then add vanilla and milk.  In a separate bowl combine the flour, salt, and baking soda, then add to dough.  It will be stiff.  Using a spoon add in candy and chocolate chips, being careful not to break the candy.  If the candy and chips don’t stick to the dough very well, that’s ok.  You can put them in when you form the cookies.

Form the dough into balls (adding candy and chips in if necessary) and place onto cookie sheets lined with parchment paper or a silicon baking mat.  Flatten the cookies with your fingers just a little.  Bake 9-11 minutes.
