No, really. That’s the name of these cookies – HolyCrapTheseAreAmazing Cookies. Well, I think actually the original name was Peanut Butter Cornflake Cookies. But truly, holy crap, they are amazing. And easy! You don’t even have to bake them!
It might be kind of late to be making Christmas cookies. Some of you have had them done for a while now. But some of you last minute folks may be looking for something simple to make, so here you go! I promise, whoever you share them with will love them. Unless they don’t like peanut butter, in which case, you probably aren’t friends with them anyway.
HolyCrapTheseAreAmazing Cookies
A.K.A. No Bake Peanut Butter Cornflake Cookies
Adapted from Sticky Gooey Creamy Chewy
Ingredients:
- 1 cup sugar
- 1 cup corn syrup
- 1 18 oz jar (18 oz ounce) peanut butter, crunchy or smooth (I use smooth)
- 6 cups corn flakes
- About 3 oz good quality chocolate of your choice (I use Ghiradelli semisweet chips)
Directions:
Combine sugar and corn syrup in a medium saucepan over medium high heat. Stir until the mixture comes to a full boil. Remove from heat and stir in the whole jar of peanut butter. Mix well. In a large bowl, add the corn flakes and pour in the peanut butter mixture. Mix well, making sure to coat all of the corn flakes.
With a tablespoon or using your fingers (my preferred method – just be careful, it’s hot), scoop out and form into 1-2 inch piles on a cookie sheet lined with parchment or wax paper. The beauty of these is they don’t have to be perfect. Just plop them down in the shape and size you like.
Put the chocolate in a small bowl and melt in the microwave for about 30 seconds. Stir until smooth. Drizzle the melted chocolate over the cookies. You can do this by dipping a fork in the chocolate and then lightly flinging it back and forth over the cookies, or you can put the chocolate in a plastic bag or piping bag and just cut the tiny, tiny tip off. If you do this method, just be careful, the chocolate will be hot through the bag. Store in an air tight container. Not that you will need to store them for long once you introduce them to your friends and family. 🙂
